ESS has a professional and structured yet flexible and personal approach to providing services for our clients and contracts.
ESS has a three-stage approach to providing our services:
- We base decisions on consumer, client and operational insight
- We are constantly reviewing and learning from our operating contracts
- We focus on our clients' requirements.
Contracts with our clients are usually based around three models:
- Management Fee
All of the operating costs are paid by the contractor and recharged to the client along with an agreed fee. This model is commonly used where the client subsidises the food offer. - Fixed Price
The client pay an agreed price for a specified range of services - Profit and Loss
The foodservice contractor has control over the offer to the consumer and sets the price.

ESS is the market leader for conducting bespoke research in the Defence & Government services sector. Our unique Compass insight team uses a mix of bespoke sector research and wider market research to gain insight to this market. During this research, we haved gained extensive quantitative and qualitative results to determine consumer preferences for catering, retail and leisure services.
